Ingredients:
- Apple(s) 3 medium, Granny Smith variety
- Fresh Dates 6 individual, pitted, chopped
- Quick Oats 1⅔ cup(s) (150g)
- Baking Powder 1½ tsp
- Ground Cinnamon 1½ tsp
- Chia Seeds 1 Tbsp
- Egg(s) 2 medium, lightly beaten
Instructions:
- Preheat oven to 325°F.
- Line an 8 x 4-inch loaf pan with baking paper.
- Grate 2½ apples and dice the remaining apple half.
- Place dates in a microwave-safe small bowl with 2 tablespoons water. Microwave on High (100%) for 1 minute. Mash with a fork.
- Place oats, baking powder, cinnamon and chia seeds into a large bowl. Add eggs, grated apple and mashed dates to bowl. Stir to combine ingredients.
- Spoon mixture into prepared tin and smooth over the top. Sprinkle with diced apple then lightly press into mixture.
- Bake for 55 minutes or until a skewer inserted into the center comes out clean.
- Cool in the loaf tin. Cut into 8 slices to serve.
