No-Bake Pumpkin Protein Balls

Ingredients:

  • Uncooked Quick Oats  2 cup(s)
  • Vanilla Whey Protein Powder  3 oz
  • Pumpkin Pie Spice  2½ tsp
  • Canned Pumpkin Puree  1 cup(s)
  • Lily's Semi-Sweet Style Baking Chips  2 oz, about ⅓ cup

Instructions:

  1. In a large bowl, stir together the oats, protein powder, and pumpkin pie spice.
  2. Add the pumpkin puree and stir well with a silicone spatula until evenly moistened.
  3. Stir in the chocolate chips.
  4. Divide the mixture into 16 equal portions (about 2 tbsp each) and roll each into a ball.
  5. Place the balls on a plate or platter; refrigerate until firmer, at least 1 hour.
  6. Serving size: 1 ball
